This lemon loaf is bright, buttery, and deeply lemony — the kind of thing you make with every intention of keeping it for yourself and then immediately want to give to everyone you know. Baking it in Italian paper molds means it goes straight from oven to gift bag with zero fuss.

The recipe is reliable enough to multiply for batch baking. One batch fills two medium paper loaf molds — exactly right for keeping one and giving one away.

What You'll Need

Ingredients

•       1½ cups (190g) all-purpose flour
•       1½ tsp baking powder
•       ½ tsp salt
•       3 large eggs, room temperature
•       1 cup (200g) granulated sugar
•       ¾ cup (180ml) sour cream or whole-milk plain yogurt
•       ½ cup (120ml) neutral oil (vegetable, canola, or light olive oil)
•       Zest of 2 large lemons (about 2 tablespoons)
•       2 tbsp fresh lemon juice
•       1 tsp vanilla extract

For the Glaze (Optional but Recommended)

•       1 cup (120g) powdered sugar, sifted
•       2–3 tbsp fresh lemon juice
•       Pinch of salt

Equipment

•       2 medium Italian paper loaf molds (or 1 standard 9" x 5" loaf pan if needed)
•       Mixing bowls
•       Whisk
•       Zester or microplane
•       Cooling rack

Instructions

1. Prep (5 minutes)

1.     Preheat oven to 350°F (175°C). No need to grease your paper molds.

2.     Zest your lemons directly over your sugar and use your fingers to rub the zest into the sugar. This releases the lemon oils and infuses the sugar with concentrated lemon flavor. It makes a real difference.

 

2. Mix the Batter (10 minutes)

3.     In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

4.     In a large bowl, whisk the lemon-sugar with the eggs until pale and slightly thickened, about 1–2 minutes.

5.     Whisk in the sour cream, oil, lemon juice, and vanilla until smooth.

6.     Add the flour mixture and fold gently with a spatula just until no dry streaks remain. Don't overmix — a few lumps are fine. Overmixed batter makes a tough loaf.

 

3. Bake (50–60 minutes)

7.     Divide the batter evenly between your two paper molds. They should be about ¾ full.

8.     Place molds directly on the oven rack or on a half sheet pan for easier handling.

9.     Bake for 50–60 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs. The top should be golden and slightly cracked along the center — that crack is a sign of a properly made loaf cake.

10.  Let cool in the molds on a rack for at least 20 minutes before glazing.

 

4. Glaze (5 minutes)

11.  Whisk together the powdered sugar, lemon juice, and pinch of salt until smooth. It should be pourable but not watery — thick enough to coat the back of a spoon.

12.  Pour the glaze over the cooled loaves, letting it drip over the sides.

13.  Let glaze set for 15–20 minutes before wrapping or serving.

Tips for the Best Lemon Loaf

•       Room temperature eggs and dairy incorporate more easily and create a more tender crumb. Pull them out 30 minutes before baking.
•       Don't skip rubbing the zest into the sugar. This step is the difference between a subtly lemon-flavored loaf and one that really tastes like lemons.
•       The loaf is done when it's deeply golden and the center crack looks set (not wet). If it's golden but the center still looks shiny, give it 5 more minutes.
•       Paper molds keep the loaf moist longer than a metal pan because they breathe slightly — the loaves will stay good at room temperature for 3–4 days, or up to a week in the refrigerator.
