3 lbs ground pork
1 lb bag coleslaw mix (shredded cabbage & carrots)
1 small head green cabbage, shredded (~6 cups)
6 garlic cloves, minced
2 tbsp fresh ginger, grated
1 bunch green onions, sliced (whites & greens separated)
2 tbsp olive oil or neutral oil
Stir-Fry Sauce
⅓ cup coconut aminos (or low-sodium soy sauce)
3 tbsp toasted sesame oil
2 tbsp rice vinegar
1 tbsp sriracha (adjust to taste)
Seasoning & Garnish
2 tsp salt
1 tsp black pepper
1 tsp onion powder
½ tsp ground ginger
2 tbsp sesame seeds
¼ cup fresh cilantro, chopped

Instructions

Make the Stir-Fry Sauce

In a small bowl, whisk together the coconut aminos, toasted sesame oil, rice vinegar, and sriracha. Set aside.

Brown the Pork Until Crispy

Heat oil in a very large skillet, wok, or Dutch oven over medium-high heat. Add the ground pork and cook, breaking into small crumbles, until well browned and crispy in spots.
