Red, White & Blue Celebration Cake

Every great cake starts with the right tools, and nothing proves that more than a perfectly scraped batter bowl. Ingredients

The Cake

  • 3 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 cup whole milk, room temperature
  • Red gel food coloring
  • Royal blue gel food coloring

Frosting & Filling

  • 3 cups unsalted butter, softened
  • 7 cups powdered sugar, sifted
  • 1/4 cup heavy cream
  • 2 tsp pure vanilla extract
  • Pinch of fine salt
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh strawberries, sliced
  • Fresh mint for garnish (optional)

Method

Make the cake layers

Step 1. Preheat oven to 350 degrees F. Grease and flour three 8-inch round cake pans, lining the bottoms with parchment. Whisk flour, baking powder, and salt together in a bowl and set aside.

Step 2. Beat butter and sugar in a stand mixer on medium-high until pale and fluffy, about 4 minutes. Add eggs one at a time, then vanilla. Alternate adding the flour mixture and milk in three additions, beginning and ending with flour. Use your bamboo-handled scraper to sweep every bit of batter from the bowl and beater head. This step alone can recover nearly 1/4 cup of batter that would otherwise be lost.

Step 3. Divide the batter evenly into three bowls (a kitchen scale makes this precise). Tint one bowl deep red and one royal blue with gel food coloring, leaving the third white. Using your scraper after each transfer ensures clean color separation with no streaks.

Step 4. Pour each batter into a prepared pan and spread evenly. Bake 26 to 30 minutes until a toothpick comes out clean. Cool in pans 10 minutes, then turn out onto wire racks and cool completely before frosting.

Make the vanilla buttercream

Step 5. Beat softened butter on medium speed for 3 minutes until very pale. Add powdered sugar one cup at a time, scraping down the bowl sides with your bamboo-handled scraper between each addition. Add cream, vanilla, and salt; beat on high for 2 minutes until light and fluffy.

Step 6. The scraper trick: when the bowl looks empty, run your scraper along the bottom and sides. There is always another tablespoon or two of buttercream clinging to the curves. Use this recovered frosting for the crumb coat.

Assemble the flag layers

Stack order, bottom to top:

  1. Blue cake layer - spread with buttercream, scatter blueberries
  2. White cake layer - spread with buttercream, scatter strawberries
  3. Red cake layer - frost the top and sides smooth

Step 7. Place the blue layer on your cake board. Using an offset spatula, spread a generous layer of buttercream. Scatter blueberries across the surface, pressing them gently into the frosting.

Step 8. Add the white layer. Frost and cover with sliced strawberries. Stack the red layer on top.

Step 9. Apply a thin crumb coat over the entire cake using your bowl scraper's edge to pull excess frosting cleanly off the side. The flat edge works just like a bench scraper for a perfectly smooth finish. Chill 20 minutes, then apply the final coat. Decorate the top with alternating rings of blueberries and strawberry slices to mimic the flag design.


Pro Tips

Gel over liquid: Gel food coloring delivers vibrant, true reds and blues without thinning the batter. A few drops go a long way. Add gradually and mix with your scraper until evenly distributed.

Make-ahead friendly: Bake the cake layers up to two days ahead and wrap tightly in plastic. Buttercream keeps refrigerated for one week. Let it come to room temperature and re-whip before using.

Room temperature matters: Cold butter and eggs cause curdling. Set everything out an hour before baking. Your scraper makes it easy to fold cold and warm components together without over-mixing.

Caring for your bamboo scraper: Hand-wash with warm soapy water and dry immediately. Never soak the bamboo handle or run it through the dishwasher. With proper care, the handle develops a beautiful natural patina.
